The grapes are gently pressed and unbuttoned precisely before being fermented. The juice is cooled for 8 days to develop the aromas, then put in a 228 L barrel for vinification.
After a particularly rainy winter period, the vegetative cycle starts a little late. The mild weather allows the vineyard to catch up and even get ahead. The grapes finish their maturation in optimal conditions: hot and dry summer.
The plot of 1.06 ha occupies on the commune of Milly-Lamartine an ideal position, half-hillside (altitude 350 meters), and enjoys exposure to the rising sun.
