Tasting note
Luminous purple colour with brilliant reflections. The nose is aromatic with an intense and open fruity that invites greed. The palate is fresh and smooth, marked by the crunchy red fruits.
Food and wine pairing
Ideal with grilled red meats, duck breast fillet or pies.
Vinification
The harvest is put in the tank and heated to 55°C to extract the colour and aromas of the grapes. After 48 hours, the must is cooled to begin the alcoholic fermentation.
Model year 2019
Hot, dry and mature vintage. From the beginning of the year, the weather is warmer than normal with a significant rainfall deficit. Frost at the beginning of April and the occurrence of leakage in June caused damage to the vines.
Vineyard
Surrounded by the castle of Monks of Berzé-la-Ville and the chapel (wall frescoes of the XIIth century), this climate oriented to the west extends for 45 ares at an altitude of 320 m.
